Pumpkin Spice & Golden Raisin Quinoa Side Dish

Makes: 4 servings

Ingredients

  • 1 cup of quinoa
  • 1 Tbsp. Green SuperFood Pumpkin Spice
  • 2 Tbsp. olive oil
  • 1/2 cup whole, unsalted almonds
  • 1/3 cup golden raisins
  • 1/4 tsp. sea salt
  • 1/4 tsp. freshly ground black pepper
  • 1/4 tsp. crushed red pepper
  • 1/4 tsp. fresh lemon zest

 

Directions

  1. In a medium saucepan, cook quinoa with 2 cups of water
  2. Cover and cook until water is absorbed, approximately 15 minutes
  3. Set aside for 10 minutes and fluff with a fork
  4. Transfer quinoa to a large serving bowl
  5. Gently toss with remaining ingredients
  6. Serve warm
