Grapefruit Edamame Guacamole

Makes: Serves 4

Ingredients

  • 1 cup edamame, shelled and steamed
  • 1 cup plain Greek yogurt
  • 1/4 tsp. sea salt
  • 2 ripe avocados, peeled, pitted and diced
  • ¼ cup fresh cilantro, chopped
  • ¼ tsp. chili powder
  • ¼ tsp. freshly ground pepper
  • Juice of 1 grapefruit
  • 1 Tbsp. Greem SuperFood Orange Dreamsicle

Directions

  1. Combine all ingredients in a food processor
  2. Process until smooth
  3. Transfer to serving dishes; serve with crackers, crudités or pitas
