Fresh Herb Tofu & Bean Salad

Makes: 4 servings

Ingredients

  • 2 Tbsp. Wheat Grass Powder
  • 1/2 tsp.  sea salt
  • 3/4 tsp.   freshly ground black pepper
  • 2 Tbsp. extra virgin oil
  • 1 large head Bibb lettuce, chopped
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1/2 cup shredded carrots
  • 1/3 cup diced red onion
  • 1 tsp. chopped fresh mint
  • 2 Tbsp. chopped fresh basil
  • 1 large tomato, diced
  • 1 cup cooked white beans
  • 1 cup cooked chickpeas
  • 1 block firm tofu, drained, rinsed and cut into ½ inch cubes
  • 2 tsp. sesame seeds
  • 2 Tbsp. ground flax seeds

Directions

  1. In a small bowl, whisk Amazing Grass powder, sea salt and pepper.  Add olive oil.
  2. In a large bowl, combine remaining ingredients.
  3. Add Amazing Grass dressing; gently toss to combine. 
  4. Divide equally into bowls. Serve at room temperature.
