Wild Rice and Jicama Salad

Makes: one tasty bowl

Ingredients

For Salad:

  • 1/2 cup wild rice, cooked
  • 1 large head Bibb lettuce
  • 1 medium zucchini, diced
  • 4 button mushrooms, thinly sliced
  • 1/3 yellow bell pepper, cut into bite size pieces
  • 1 corn on the cob, corn sliced off
  • 1 small jicama, finely chopped
  • 2 tsp fresh grated ginger
  • 1/2 cup toasted pumpkin seeds
  • 1 Tbsp. chia seeds

For Dressing:

  • 1/3 cup white balsamic vinegar
  • 3 tbsp low sodium soy sauce
  • Juice of 1 fresh lemon juice
  • 2 Tbsp. agave nectar
  • 3 Tbsp. AmBerry Green SuperFood

Directions

  1. Cook wild rice as directed on package.  Remove from heat; transfer to a large serving bowl. Add remaining salad ingredients; set aside.
  2. In a small bowl, whisk together dressing ingredients; drizzle over wild rice and vegetables.  Gently toss to coat.
  3. Enjoy
