Cranberry Jicama Salad

Makes: One big salad

Ingredients

  • 1 lb. jicama, grated

  • ½ cup dried cranberries

  • ¼ cup Amazing Meal Vanilla Chai

  • 1 1/2 cups orange juice

  • ½ tsp. ground cinnamon

  • 1 Tbsp. freshly grated ginger root

Directions

In a medium sized bowl, soak dried cranberries in orange juice for 2 hours in the fridge.  Transfer to a large serving bowl, combine remaining ingredients; gently toss to combine.  Refrigerate for 1 hour before serving.
