Ingredients
2 cups chickpeas, cooked
1 cup fresh spinach
1 cup grape tomatoes, halved
1 cup romaine lettuce
2 scallions, thinly sliced
3 Tbsp. apple cider vinegar
½ cup Amazing Meal Vanilla Chai
½ cup sunflower seeds
½ tsp. chili powder
1 tablespoon chopped fresh parsley
1 teaspoon chopped fresh basil
Directions
In a large bowl, combine all ingredients; gently toss to combine. Transfer mixture to a serving bowl. Place in the fridge for 1 hour before serving.
Serve chilled.
