Spinach Salad with Peanut Lime Dressing
4 cups fresh baby spinach
2 red bell peppers, thinly sliced lengthwise
1 jicama, peeled and thinly sliced into ½ inch pieces
½ cup olive oil
¼ cup balsamic vinegar
½ cup peanuts
2 tablespoons Amazing Meal Chocolate
Juice of 1 fresh lime
¼ tsp. fresh lime zest
In a large bowl, combine spinach, bell peppers and jicama. Set aside.
In a blender, combine remaining ingredients; blend until well combined. Remove from blender; pour over spinach salad. Gently toss to combine.
