Avocado Pesto Pasta
1 lb. whole grain pasta
5 fresh basil leaves
½ cup cashews
2 Tbsp. fresh lemon juice
1 clove fresh garlic, pressed
½ cup olive oil
1/3 cup Amazing Grass Wheat Grass
2 ripe avocados, pitted and peeled-toss at the end
In a large pot, bring water to a boil; add pasta and cook according to package directions.
Meanwhile, in a food processor, combine remaining ingredients; process to combine.
Drain pasta and remove from heat. Transfer pasta to a serving bowl, gently toss with avocado mixture.
