
Ingredients
2 large summer squash, cut into ½ inch thick strips
2 orange bell peppers, seeded and quartered
2 large sweet potatoes, cut into ½ inch cubes
12 asparagus, cut into 1 inch pieces
4 large zucchini, cut into ½ inch thick strips
1 sweet white onion, quartered
2 Tbsp. chopped fresh thyme
2 Tbsp. chopped fresh rosemary
¼ cup olive oil
2 tablespoons red wine vinegar
1/3 cup Amazing Grass Trio
Directions
Preheat grill to medium high heat.
In a large bowl, combine squash, peppers, potatoes, asparagus, zucchini and onion.
In a small bowl, mix thyme, rosemary, olive oil, vinegar and Amazing Grass Trio. Toss with vegetables until well coated.
Transfer coated vegetables into a grill basket and place onto grill. Cook for 20 minutes or until vegetables are soft to touch.
Remove from grill; serve warm with a dollop of Greek yogurt and salsa. Enjoy.
