Roasted Cashew Trail Mix

Ingredients

  • 1 cup cashews
  • 1 1/2 tsp. coconut oil
  • 1/3 cup Amazing Grass ORAC powder
  • 2/3 cup coconut flakes
  • 1/3 cup crystallized ginger, chopped
  • 1 cup dried cranberries
  • 1/2 cup yellow raisins
  • 12 dark chocolate chips         

Directions

  1. Preheat oven to 375 degrees.  Toss cashews with coconut oil and spread on a large baking sheet.
  2. Roast for 10 minutes, making sure to toss about half way through.
  3. Remove and immediately toss with remaining ingredients in a large bowl until well combined.  Set aside to cool.
  4. Store in an air tight container for up to 3 weeks.
