Balsamic Roasted Butternut Squash Salad

I think I’m the only one out there who doesn’t drink Amazing Grass. Yes, you heard me right. I don’t drink it. Well, I guess I could if I really wanted to but I’m a foodie and food is what I’m all about…so why not add Amazing Grass to my daily eats, right?

I don’t even know how it even started. I’m sure it began with a little sprinkle of that tasty chocolate powder on my fresh zucchini and now it’s spiraled into a vast array of recipes and tasty dishes. I know what you’re probably thinking… “Adding Amazing Grass to your food?” Seriously? Yes. It’s not very gourmet of me but it’s fun and delicious.

See, I’m a clean eater. I eat wholesome foods such as fresh fruits, vegetables and lean proteins and steer clear of those packaged, processed foods in the food stores. My day isn’t complete without Amazing Grass. Let’s just put it that way. How do I get creative? Well, that’s easy. How about a dish of roasted Brussels sprouts with a splash of fresh orange juice and a spoonful of Wheat Grass? Or a salmon salad consisting of chopped salmon, Greek yogurt, Barley & Wheat Grass, kale, fresh apple slices and walnuts? Even better: a slice of toast with a smear of nut butter, a drizzle of honey and a sprinkle of Chocolate Amazing Meal. Is your mouth watering yet?

I thought so.

My favorite is the new Orange Dreamsicle. It’s a dream; I kid you not. A scoop of this baby into the food processor with a ripe banana, avocado, strawberry and ricotta cheese = heaven. It’s like creating your very own soft serve ice cream dessert but without the added sugar.

Some people find it funny that I’ve never had Amazing Grass in liquid form, but I just smile and giggle because they’re the ones missing out. You can add such flavor and pizzazz to your meals and snacks with a simple scoop of Grass.

I often add it to my salsa, hummus and guacamole to make them a bit sweeter or more savory.  Looking for a sassy salsa for your tortilla chips? Add the ORAC flavor and mix it up. Looking for a savory hummus? Try a scoop of Amazing Trio.  How about a mix of sweet n’ savory guacamole? Add a pinch of Berry Amazing Meal and Wheat Grass for an all around great dip and spread that you can serve atop crackers, toast, salads, eggs, chicken, fish, tofu, crudités and so much more.

The options are endless…it just takes a bit of creativity and some fun. Go ahead, I’m encouraging you. Mix a bit of your Amazing Grass into your dish today and let me know your thoughts.

Ingredients

  • 1 large butternut squash, cut into ½ inch chunks
  • ½ tsp. cinnamon
  • 2 tsp. balsamic vinegar
  • 1/6 tsp. each sea salt
  • 1/6 tsp. freshly ground white pepper
  • 1 Tbsp. coconut oil
  • ½ cup pistachios
  • 5 fresh figs 
  • 2 cups fresh baby spinach
  • ¼ cup dried cherries, chopped
  • 2 Tbsp. Amazing Grass Trio

Directions

Pre-heat oven to 350 degrees F.
Sprinkle butternut squash with cinnamon, balsamic vinegar, sea salt, pepper and coconut oil. Transfer to a large roasting pan; roast for 25-20 minutes or until tender.
Remove pan from oven; set aside.
In a large bowl, combine pistachios, figs and spinach.  Gently toss to combine.
Transfer to serving dishes; top with roasted butternut squash.  Sprinkle with dried cherries and Amazing Grass Trio.
